Antioxidant Packed Salad

The name speaks for itself. Surprisingly satiating and appeals even to the salad haters. 

What you need:
  • 2 cups of mixed greens
  • Sliced red onion
  • 1/2 cup chickpeas
  • 1/2 cup cubed, roasted (or air fried) sweet potato
  • 1/4 medium avocado
  • 1 tsp avocado or olive oil
  • juice of 1/2 lemon
  • pinch of salt and pepper

Toss, eat, love. Between the iron-rich leafy greens, carotenoid-rich sweet potato, fiber and healthy fats - your skin, immune and digestive system will be saying merci!
